Olde Tavern Spoon Bread
“Good ol’ Southern style spoon bread made with a cornmeal mush which adds extra moistness.”
Ingredients:
- 3 cups
milk - 1 1/4 cups
yellow cornmeal - 3
eggs, beaten - 1 teaspoon
salt - 1 3/4 teaspoons
baking powder - 2 tablespoons
butter, melted
Directions:
- Measure the milk in a saucepan and bring to a boil. Add the corn flour ; cook and stir for a few minutes until corn flour has absorbed all the milk. Remove from heat and allow to cool for about 1 hour. The mixture will be very stiff.
- Preheat the oven to 375 degrees F ( 190 degrees C). Grease a 1 1/2 quart casserole .
- Ask enter the cornmeal mixture into a large bowl. Stir in the eggs , salt , baking powder and butter. Pour . Into the prepared baking dish
- Bake for 35 minutes in the preheated oven , or until the edges are lightly toasted . Serve hot straight from the shell by the spoon.
