STEAK DIANE

4 pieces of fillet steak, 0.5 cm thick, trimmed of excess fat


25 g butter or margarine

30 ml vegetable oil

30 ml Worcestershire sauce

15 ml lemon juice

1 small onion, skinned and grated

10 ml chopped fresh parsley


  1. Fry the steaks in the butter and oil for 1-2 minutes on each side. Remove with a slotted spoon and keep warm. Stir the Worcestershire sauce and lemon juice into the pan juices.

  2. Warm through, then add the onion and parsley and cook gently for 1 minute. Serve the sauce spooned over the steaks.

    Serves 4
