SKATE WITH BLACK BUTTER


700-900 g skate wings

salt

50 g butter

15 ml (1 tbsp) white wine vinegar

10 ml (2 level tsp) capers

10 ml (2 tsp) chopped fresh parsley


  1. Put the fish in a saucepan and cover with salted water. Bring to the boil, then simmer for 10-15 minutes, until tender. Cover and keep warm.

  2. Melt the butter in a saucepan, cook until it turns golden brown, add the vinegar and capers and cook for a further 2-3 minutes. Pour over the fish, sprinkle with parsley and serve immediately.
    Serves 4
