Black Beans con Jalapeno

“This flavorful, Mexican-style dish can be used as a salsa or a salad.”


Ingredients:


  • 1 (15 ounce) can

    white hominy, drained

  • 1 (15 ounce) can

    black beans, rinsed and drained

  • 1 cup

    diced white onion

  • 1 cup

    diced green bell pepper

  • 1 cup

    diced red bell pepper

  • 1 cup

    diced green onions with tops

  • 1/4 cup

    seeded and chopped jalapeno pepper

  • 1 (24 ounce) jar

    picante sauce

  • 2 tablespoons

    ground cumin

  • 1 tablespoon

    salt

  • 2 tablespoons

    white sugar

  • 1/2 cup

    finely chopped cilantro

Directions:


  • In a large bowl , stir gently hominy , black beans, onions , green and red peppers, onions , jalapeno , picante sauce , cumin , salt, sugar and coriander. Refrigerate at least one hour before serving. With tortilla chips serve on a bed of lettuce.
