Thanksgiving yams

“Mother’s great yams were always a hit at Thanksgiving. In America, yams are actually a type of sweet potato. Gingersnap cookies and marshmallows make this dish a real treat.”


Ingredients:


  • 2 (29 ounce) cans

    sweet potatoes

  • 2 tablespoons

    butter

  • 1 tablespoon

    lemon juice

  • 1/2 (16 ounce) package

    gingersnap cookies

  • 1 (16 ounce) package

    miniature marshmallows

Directions:


  • In a medium saucepan over medium heat , combine sweet potatoes , butter and lemon juice. Break gingersnap cookies in the mixture. Stir and cook until thickened , about 15 minutes.

  • Cover the mixture with the desired amount of marshmallows . Remove from heat and cover for 5 minutes, or until the marshmallows are not melted. Serve warm .
