Black Beans con Jalapeno
“This flavorful, Mexican-style dish can be used as a salsa or a salad.”
Ingredients:
- 1 (15 ounce) can
white hominy, drained - 1 (15 ounce) can
black beans, rinsed and drained - 1 cup
diced white onion - 1 cup
diced green bell pepper - 1 cup
diced red bell pepper - 1 cup
diced green onions with tops - 1/4 cup
seeded and chopped jalapeno pepper - 1 (24 ounce) jar
picante sauce - 2 tablespoons
ground cumin - 1 tablespoon
salt - 2 tablespoons
white sugar - 1/2 cup
finely chopped cilantro
Directions:
- In a large bowl , stir gently hominy , black beans, onions , green and red peppers, onions , jalapeno , picante sauce , cumin , salt, sugar and coriander. Refrigerate at least one hour before serving. With tortilla chips serve on a bed of lettuce.
